Zucchini and Chickpeas in Curry Spices

Ingredients
1 zucchini
1 large onion
1 can of chickpeas
1 can of chopped tomatoes or 300-400g of fresh tomatoes
any kind of masala spice mix
Olive oil, salt
Optionally garlic and coriander
Method
- wash and cut the zucchini and onion into thick quarter or half slices.
- Add them to a pan on medium/high heat with some olive oil and salt. Let them roast for 2-3 min and then add the washed chickpeas with the masala spice mix until all ingredients are slightly coated.
- For extra flavor add the garlic
- Let this cook for about 10 min and then add the crushed tomatoes. Mix and taste if the seasoning is adequate. Add more if needed.
- Let it cook for 10-15min and lastly add some fresh herbs like coriander.
- Add everything onto a baking tray and bake for 30min on 220 degrees Celsius. If you are using the zucchini add it onto the tray after 10min as it takes less time to cook
- Serve with rice and enjoy :).
