Zucchini and Chickpeas in Curry Spices

A very simple and nutritious dish for your zucchinis

Zucchini and Chickpeas in Curry Spices

Ingredients

1 zucchini
1 large onion
1 can of chickpeas
1 can of chopped tomatoes or 300-400g of fresh tomatoes
any kind of masala spice mix
Olive oil, salt
Optionally garlic and coriander

Method

  1. wash and cut the zucchini and onion into thick quarter or half slices.
  2. Add them to a pan on medium/high heat with some olive oil and salt. Let them roast for 2-3 min and then add the washed chickpeas with the masala spice mix until all ingredients are slightly coated.
  3. For extra flavor add the garlic
  4. Let this cook for about 10 min and then add the crushed tomatoes. Mix and taste if the seasoning is adequate. Add more if needed.
  5. Let it cook for 10-15min and lastly add some fresh herbs like coriander.
  6. Add everything onto a baking tray and bake for 30min on 220 degrees Celsius. If you are using the zucchini add it onto the tray after 10min as it takes less time to cook
  7. Serve with rice and enjoy :).
